Ever wondered what makes EPCOT’s festival food so incredibly tasty? It’s often that secret ingredient, the perfect sauce! Meet Warren Clarke, a master saucier who spends his days crafting those unforgettable flavors. His team works magic behind the scenes, long before the crowds arrive.
Warren has dedicated nearly 20 years to honing his culinary skills at Walt Disney World Resort. As a saucier, he leads his team in creating the ideal sauce pairings for every single festival dish. Come behind the scenes with us!

The Magic Behind the Sauces
Months before you even smell the first delicious aroma, Warren and his team get to work. They don’t just cook; they test, experiment, and refine. Every creative idea becomes a foundational flavor that millions of guests will savor. These sauciers meticulously craft hundreds of gallons of sauces and dressings. Can you imagine? « Sometimes, we make over 500 gallons a day! » Warren laughs.
Of course, it’s not always perfect from the start. Warren recalls developing a Miso Cola sauce for the festival. It was too sweet. « I could tell it needed a few adjustments, » he explains. He took his time, rearranged ingredients, and nailed it! You can taste his dedication at the Trowel and Trellis booth, right by Disney Traders!

From Kitchen to Career: Warren’s Disney Journey
So, how does one become a Disney saucier? Warren’s journey is fascinating, really. He built his career one kitchen at a time, literally!
He started behind the scenes in food handling, then moved to roles at Coral Reef Restaurant and Sunshine Seasons, soaking up knowledge and honing his craft at every turn. He specialized with the festival team, realizing, « Anything you want to do outside of Disney, you can do right here within the company. »
You can feel his passion in every dish. « I love that people appreciate what I do, » he shares, beaming. « It makes me feel really grateful. »
This incredible dedication, his keen eye for detail, even earned Warren the Walt Disney Legacy Award! It’s the highest honor a Cast Member can receive, a true recognition from his peers for the magic he creates every day.

Taste Warren’s Caribbean Magic at EPCOT
Visiting this year’s EPCOT International Flower & Garden Festival? You have to try something special: the pigeon pea rice and Jamaican Jerk Chicken. Warren helped create it, drawing inspiration from his own Caribbean roots! It’s a taste of the islands, and you’ll find it at La Isla Fresca, nestled between the France and Morocco pavilions.
« What excites me most is seeing guests enjoy the dishes and knowing I was part of creating them, » he shares. « Sometimes, I walk through the park, see someone eating something I made, and that feels really good. » And honestly, that’s what Disney magic is all about.
